Drying is the most important technological task in pasta production processes.This is the modern engineering which involves the best level of drying , however two crucial parameters must be selected with great care: temperature and relative humidity.
Note : After drying, the moisture content in the product is about 12%. In fact, according to the law dry pasta may not have a water content of more than 13%
